Easy Carrot Cake Cobbler Recipe (With Caramel Pecan Sauce!)

When you think of carrot cake, you usually imagine a towering layer cake completely encased in cream cheese frosting. While that is delicious, sometimes you want a dessert that is a bit more rustic, cozy, and infinitely easier to put together. Enter the Carrot Cake Cobbler. This brilliant “magic cake” or self-saucing pudding dessert combines all the spiced flavors of traditional carrot cake with a warm, gooey, bubbling caramel-pecan sauce.

This warm, self-saucing Carrot Cake Cobbler is the ultimate cozy dessert!

What is it

A Carrot Cake Cobbler is a hybrid dessert that bakes a soft, spiced carrot cake batter over a rich sauce layer. The “magic” happens during the baking process. You spread the cake batter into a pan, sprinkle it generously with brown sugar and pecans, and then carefully pour boiling water over the entire thing without stirring. As it bakes, the cake layer rises to the top, while the sugar, water, and butter sink to the bottom to create an incredibly rich, bubbling caramel sauce.

Why you’ll love it

  • It is practically effortless: There is no need for multiple cake pans, stacking layers, or complicated frosting. You simply mix, dump, and bake.
  • The incredible texture: The top bakes into a soft, spongy cake, while the bottom turns into a thick, sticky caramel pecan sauce that is to die for.
  • Perfect for holidays: It makes the ultimate easy Easter or Thanksgiving dessert.
  • Warm comfort: Unlike traditional carrot cake that is served cold, this cobbler is served piping hot straight out of the oven!

Ingredients

To make this cozy 9×9-inch or cast-iron skillet dessert, you will need:

For the Cake Batter:

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon, plus nutmeg, cloves, and ginger to taste
  • ½ teaspoon kosher salt
  • ¾ cup milk or buttermilk
  • ¼ cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 ½ cups freshly grated carrots (about 2-3 medium carrots)

For the Caramel Pecan Topping:

  • ½ cup dark brown sugar (or light brown sugar)
  • ½ cup granulated sugar
  • ½ cup chopped pecans (or walnuts)
  • 1 to 1 ½ cups boiling hot water

(Note: Always grate your carrots fresh! Pre-shredded carrots from the store are too dry and thick for a delicate cobbler).

How to make

Step 1: Prep the Pan and Dry Ingredients
Preheat your oven to 350°F (175°C) and grease a 9×9-inch ceramic baking dish or a 10-inch cast-iron skillet. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and spices.

Step 2: Mix the Batter
Add the milk (or buttermilk), melted butter, and vanilla extract to the dry ingredients, stirring just until no large flour lumps remain. Gently fold in the freshly grated carrots. Spread this thick batter evenly into the bottom of your prepared baking dish.

Step 3: Add the “Magic” Topping
In a small bowl, combine the brown sugar, the remaining granulated sugar, and the chopped pecans. Sprinkle this mixture evenly over the top of the wet cake batter.

Step 4: Pour the Water and Bake
Carefully and slowly pour the boiling hot water over the entire top of the dish. Do not stir it!. It will look messy and watery, but trust the process. Carefully transfer the pan to the oven and bake for 40 to 45 minutes. You will know it is done when the cake layer is set and spongy on top, and the edges are bubbling with thick caramel sauce.

Do not stir the boiling water into the batter! This is what creates the magic caramel sauce underneath the cake layer as it bakes.

How To Serve

Because this dessert is so rich and gooey, you must let it cool for at least 10 to 15 minutes before serving so the caramel sauce has time to thicken slightly. Scoop it into bowls while it is still very warm. The only acceptable way to serve this cobbler is with a giant scoop of vanilla bean ice cream or a generous dollop of Whipped Cream Frosting to melt into the hot caramel sauce!

How To Store

If you happen to have any leftovers, cover the baking dish tightly with plastic wrap or aluminum foil and store it in the refrigerator for up to 3 days. This dessert does not hold up well at room temperature due to the high moisture content. When you are ready to eat the leftovers, scoop a portion into a bowl and microwave it for 30-45 seconds until it is piping hot and gooey again. We do not recommend freezing this cobbler, as the sauce layer will absorb into the cake and become mushy.

FAQs

Can I add pineapple or coconut to this cobbler?
Yes! Many traditional carrot cakes feature crushed pineapple. You can fold ¼ cup of well-drained crushed pineapple or shredded coconut into the cake batter along with the carrots .

Why did my sauce sink into the cake?
If you stirred the boiling water into the batter, the sauce will not separate properly. You must pour the water over the top and leave it alone! It can also happen if your water was not actually boiling when you poured it .

Can I use a cake mix instead of making it from scratch?
Absolutely. You can use a boxed spice cake or carrot cake mix and prepare the batter according to the box directions, fold in fresh carrots, and then proceed with the sugar and boiling water topping .

Note

Do not use a shallow baking pan for this recipe. The caramel sauce will bubble furiously while it bakes. Ensure your baking dish is at least 2 to 2 ½ inches deep to prevent a sticky disaster in your oven !

Tips and Tricks

  • If you miss the traditional cream cheese pairing, try making a quick Cream Cheese Frosting glaze. Just thin out the frosting with a little milk and drizzle it generously over the hot cobbler right before serving!
  • Swap the pecans for walnuts if you prefer, or leave the nuts out entirely if you have an allergy .
